Ingredients
- Double Pie Crust
2 1/2 cups all-purpose flour
1 tsp salt
1 cup (2 sticks) cold unsalted butter, cut into small pieces
1/2 cup ice water (more as needed) - Apple Filling:
7-8 medium apples (tart varieties like Granny Smith, Honeycrisp, or a mix)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup all-purpose flour
1 tbsp lemon juice
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch of salt - Egg Wash:
1 large egg, beaten
1 tbsp water or milk
Coarse sugar for sprinkling (optional)
Instructions:
- Make the pie crust: In a bowl, whisk flour and salt. Cut in butter using a pastry blender (or your fingers) until the mixture resembles coarse crumbs. Stir in ice water, 1 tablespoon at a time, until the dough just comes together. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 1 hour.
- Prepare the filling: Peel, core, and thinly slice apples. In a large bowl, combine apples with sugars, flour, lemon juice, spices, and salt. Toss well to coat.
- Assemble the pie: Roll out one chilled disc of dough, and fit it into a 9-inch pie dish. Trim the edges, leaving a slight overhang. Pour the apple filling into the crust. Roll out the remaining dough and cut into strips for a lattice top, or cover with a whole crust and cut slits for venting. Crimp edges to seal.
- Egg Wash & Bake: Brush the top of the pie crust with egg wash and sprinkle with coarse sugar (if using). Preheat oven to 425°F. Place the pie on a baking sheet (to catch drips) and bake for 15 minutes. Reduce heat to 375°F and bake 40-50 minutes more, or until the apples are tender and the crust is golden brown (cover edges with foil if browning too quickly).
- Cool: Let the pie cool completely on a wire rack before slicing and serving. This allows the filling to thicken.
Notes
- Apple Choice: Use a mix of tart and sweet apples for the best flavor balance.
- Thickening Power: The flour in the filling helps to thicken the juices as the pie bakes.
- Spice it Up: Adjust the spices to your liking – add a pinch of ginger, cloves, or cardamom.
- Serve Warm with a Scoop: Apple pie is wonderful on its own, but even better with a scoop of vanilla ice cream or a dollop of whipped cream!
Forget those store-bought apple pies with the mushy filling and soggy crust. This recipe is the real deal – the kind of apple pie your grandma used to make! You’ll get that perfectly flaky, golden crust and a filling packed with tender apples, warm cinnamon spice, and just the right amount of sweetness. Trust me, the whole house will smell amazing, and your first bite will take you right back to cozy fall days.
