Ingredients

2 cups (340g) semi-sweet chocolate chips or chopped chocolate
1 tablespoon coconut oil (optional, for smoother chocolate)For the Peanut Butter Filling:
1 cup (240g) creamy peanut butter
1/4 cup (50g) powdered sugar
1/4 teaspoon vanilla extract
A pinch of salt
Instructions:
- Prepare the Chocolate:
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth. Alternatively, melt the chocolate using a double boiler. - Prepare the Peanut Butter Filling:
In a medium bowl, mix together the peanut butter, powdered sugar, vanilla extract, and salt until smooth and well combined. - Assemble the Peanut Butter Cups:
Line a muffin tin with cupcake liners.
Spoon a small amount of melted chocolate into the bottom of each liner, just enough to cover the bottom (about 1-2 teaspoons).
Gently tap the muffin tin on the counter to spread the chocolate evenly.
Place the muffin tin in the refrigerator for about 10 minutes to let the chocolate set. - Add the Peanut Butter Layer:
Once the chocolate has set, scoop a small amount of the peanut butter mixture (about 1 teaspoon) and roll it into a ball. Flatten the ball slightly and place it on top of the chocolate layer in each liner.
